Homemade Maple Walnut Granola Parfait!

It is well known that breakfast is the most important meal of the day. But what do you do when, like me, you don’t like the standard eggs or cereal for breakfast? Well, I went on a search and found the perfect breakfast meal. This yummy Maple Walnut Granola Parfait will entice you to never skip breakfast again!

A dash of history … Parfait is a French word meaning perfect. In North America, the current twist on this classic frozen, French cream dish is typically made with yogurt, granola and fruit.

Ingredients – serves 2

Granola
3/4 cup rolled oats (not instant)
1/3 cup chopped walnuts
1 teaspoon cinnamon
1/2 teaspoon salt
1 tablespoon melted coconut oil
3 tablespoons maple syrup

Fruit 
You can really choose any of your favorite fruits. I happened to choose the best I could find at the market – strawberries, blueberries, raspberries, and bananas.

Yogurt
Again, choose your favorite yogurt – I went with low fat vanilla.

Prepare Granola Ingredients

I measured out all of the ingredients before adding them to my mixing bowl.

First, the dry ingredients – rolled oats, walnuts, cinnamon and salt. Don’t forget to chop your walnuts into smaller pieces so they are bite sized in your delicious granola.

Next, the liquid ingredients. Take 1 tablespoon of coconut oil and put it in a microwave bowl – should take about 20 – 30 seconds for it to melt. Measure out your maple syrup and put that in a separate bowl.

Mix it All Up

Take both the dry and wet ingredients and mix them together in a bowl until the ingredients begin to stick together.

Bake the Granola

Transfer your mixture onto a baking sheet lined with either parchment paper or tin foil. If you choose to use tin foil, make sure to drizzle some melted coconut oil onto it to prevent sticking. Spread your granola mixture evenly across the baking sheet and bake for 20 minutes at 400° F.

Prep the Fruit

The 20+ minutes your granola takes to bake offers the perfect opportunity to prepare the fruit. I chose to slice my strawberries and bananas and to leave the blueberries and raspberries whole!

I always choose to use a wood cutting board to prep my fruits and veggies. Grab Green All Purpose Cleaner keeps my cutting board clean and un-stained.

Time to build your parfait!

You can prepare parfait in just about any dish, but glass is typically preferred so the beautiful layers of ingredients can be admired. I happen to have the perfect dish—an oversized glass mug!

Add enough yogurt to cover the bottom of your glass or bowl, add your strawberries, then another layer of yogurt, your granola and blueberries, another layer of yogurt, and then the rest of your granola and fruit.

I love this recipe because the granola can be made ahead of time and enjoyed all week long, you have the freedom to choose your own fruits, and freedom to switch it up from time to time!
