Simple and Healthy Recipes
Gather 2 large bunches of spinach (about 1lb), extra virgin olive oil, 3 cloves of sliced garlic, and salt to taste.
Heat 2 tbsp olive oil in a large skillet on medium high heat. Add the garlic and sautée for about 1 minute, until the garlic is just beginning to brown.
Add the spinach to the pan, packing it down a bit if you need to with your hand. Cover the pan and cook for 1 minute. Uncover and turn the spinach over again. Cover the pan and cook for an additional minute.
Gather 1 package of fresh baby spinach, 1 cup canned apricot halved, drained and sliced, 1/2 cup golden raisins, 1/2 raspberry vinaigrette, 1 teaspoon grated lemon peel.
Combine ingredients in large salad bowl, drizzle with vinaigrette and sprinkle with lemon peel. Toss until salad is coated to preference.
Gather 1 package frozen chopped spinach, thawed and squeezed dry, 1 cup shredded part-skim mozzarella cheese, 1 cup chopped fresh mushrooms, 1 envelope onion mushroom soup mix, 2 pounds ground beef.
In a large bowl, combine the spinach, cheese, mushrooms and soup mix. Crumble beef over mixture and mix well.
Shape into 8 patties. Grill, covered, over medium-hot heat for 5-7 minutes on each side or until a meat thermometer reads 160 and meat juices run clear.
