If you’re anything like me, you too love leisurely rising out of bed on a Sunday to throw together a scrumptious breakfast, and relish the opportunity to hop back into the coziness of your bed to enjoy! This little savory dish is the perfect recipe to experience such a moment!
Little Dipper Bread Cup
Ingredients – serves 3
3 french rolls – individual sized
1/4 cup turkey breakfast sausage
3 tablespoons parmesan cheese
2 tablespoons unsalted butter
1 tablespoon Italian leaf parsley
Pinch of salt & pepper
Begin by using a 2” round cookie cutter, press and hallow out the center of the French rolls. Coat inside and the top bit cut out with butter & place on a lined baking sheet.
In a non-stick pan— I prefer using a Scanpan —brown the turkey breakfast sausage and breakup into small crumbles. Spoon a couple teaspoons of sausage crumbles into each hallowed bread bowl.
Carefully crack one egg into each roll. Using a fine grater—I like the fine grate of a zester— shred about 1 tablespoon of parmesan on top of each egg and sprinkle with salt and pepper.
Place baking sheet in oven and bake for 15 minutes on 350°, until the whites of the eggs are almost cooked. Rotate the baking sheet once if you notice they aren’t cooking evenly.
While the cups are in the oven, roughly chop the Italian parsley.
Be aware the eggs will continue to cook after you take them out of the oven! Once removed, allow to set for 60 seconds, top with a generous amount of parsley and ta-da! You have a simply delicious Sunday breakfast in bed.
Once you decide lounging time has been fully enjoyed, its time to clean up. Since I prepped, baked and served my breakfast on items that are best washed by hand and this recipe doesn’t require too many dishes, I recommend Grab Green Liquid Dish Soap. Highly effective, ultra-concentrated (no need to use too much) and perfect for all hand dish-washing.
